From Chitterlings.com News Letter Message: 13 Date: Tue, 02 Dec 2003 06:39:02 -0000 From: "Cajuntater" Subject: Old Home Macaroni and Cheese Old Home Macaroni and Cheese 1/4 cup butter 1/4 cup flour 1 tsp salt 2 cups milk 1/4 lb velveeta cheese, cubed 8 oz shredded cheddar cheese 2 cups elbow macaroni, cooked, drained 2 tbsp seasoned dry bread crumbs Melt 3-tbsp in a large saucepan over low heat. Blend in flour and salt. Cook and stir one minute. Gradually add milk to flour mixture. Continue cooking while stirring constantly until thickened. Add prepared cheese product and 1-1/2 cups cheddar cheese. Stir until melted. Stir in prepared macaroni. Pour into a lightly greased 1-1/2 quart casserole dish. Melt remaining 1-tbsp of butter and toss into bread crumbs. Sprinkle casserole with remaining 1/2 cup of cheese and bread crumb mixture. Bake at 350 degrees for 20 minutes or until thoroughly heated.
