Fresh Herb Pasta with Spicy Dressing Prep: 10 min, Cook: 15 min. 3/4 lb. penne pasta, or other tubed pasta 1-1/4 carrots, cut into thin sticks 1/3 cup fresh basil, chopped 1/3 cup fresh mint, chopped 1/3 cup fresh coriander, chopped 1/3 cup bean sprouts 1-3/4 Tbs. oil 2-3/4 Tbs. olive oil 3/4 tsp. sesame oil 2-3/4 Tbs. lime juice 1-3/4 Tbs. light soy sauce 1/4 tsp. sugar 1-1/4 tsp. sambal oelek, or hot chili sauce 1-1/4 tsp. oil 2 cloves garlic, sliced 1-3/4 Tbs. unsalted cashews, chopped Cook pasta in a large pan of boiling water 10 minutes, or until al dente. Drain. Combine pasta, carrots and next 4 ingredients in a bowl. Combine next 7 ingredients in a jar with a tight-fitting lid and shake well. Add dressing to salad in bowl and toss well. Heat oil in a heavy nonstick pan over medium-high heat. Add garlic and cook until lightly browned and crisp. Serve salad sprinkled with garlic and nuts.
