Onion Rice
" Simple and versatile rice side dish that everyone loves! "
Ingredients 1 tablespoon vegetable oil 1 red onion, chopped 1 cup long-grain white rice 2 cups chicken broth 1 teaspoon ground black pepper Directions 1 Heat a large saucepan on medium heat. Pour in oil and onion; saute for a few minutes before adding rice. 2 When onion is clear, add black pepper and broth. Bring the mixture to a boil and cover. Reduce heat to low and simmer, covered, for about 20 minutes. 3 Uncover the pan, fluff with a fork and serve! Makes 6 servings
