CHICKEN & PENNE PASTA TOSS
Makes 4-6 servings.
1 pound penne pasta 2 tablespoons olive oil 1½ pounds boneless, skinless chicken breasts, cut into 1/4" strips ½ stick butter 2 cups heavy cream 1 cup grated Parmesan cheese 1 teaspoon garlic powder ½ teaspoon salt 1 teaspoon black pepper 1 package sun-dried tomatoes (3 ounces), moist and sliced
In a large pot, cook the pasta according to package directions. Drain and set aside in a colander. In the same pot, heat the oil over medium-high heat. Add the chicken and sauté for 5-7 minutes or until no pink remains. Meanwhile, in a large saucepan, combine the butter and heavy cream over medium heat. Bring to a boil, stirring occasionally. Reduce the heat to low and add the Parmesan cheese, garlic powder, salt and pepper. Stir until smooth, then add the sun-dried tomatoes and heat through. Add the cheese/cream mixture to the chicken along with the pasta and heat over medium heat for 3-5 minutes, or until heated through and thoroughly combined, stirring constantly.
