Garden Chicken on a Bun
Hey, it's OK to cheat a little. Dress up a frozen chicken patty with a quick sauce made from homegrown tomatoes and kohlrabi. Source: Better Homes and Gardens
1 12-ounce package (4) frozen breaded fully cooked chicken patties 1 small kohlrabi, cut into matchstick pieces 1 cup sliced fresh mushrooms 1 small onion, sliced and separated into rings 1 stalk celery, thinly sliced 1 tablespoon snipped fresh rosemary 1 tablespoon olive oil 2 large ripe tomatoes, chopped 2 teaspoons minced garlic 4 Kaiser rolls 2 tablespoons mayonnaise or salad dressing Lettuce leaves
1. Bake chicken patties according to package directions. Meanwhile, in a 10-inch skillet cook kohlrabi, mushrooms, onion, celery, rosemary, and 1/2 teaspoon salt in hot oil over medium heat 10 minutes. Stir in tomato and garlic. Simmer, uncovered, 5 minutes more. 2. Toast rolls, if desired. Spread bottom of buns with mayonnaise or salad dressing; place lettuce and chicken patty on each. Spoon sauce over. Add bun top. Makes 4 servings.
