Open Face Zucchini & Roasted Red Pepper Melt 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise, you may substitute light mayonnaise 1 clove(s) garlic, minced 1 tablespoon chopped fresh basil, you may substitute 1 teaspoon dried basil 1 1/2 teaspoons chopped fresh oregano, you may substitute 1/2 teaspoon dried oregano 1/2 teaspoon ground black pepper 1 loaf Italian bread (14 inches), sliced lengthwize and cut in half 1 large zucchini, sliced diagonally into 16 slices 1 cup roasted red peppers (7-ounce jar), drained and cut into quarters, you may substitute 2 medium red peppers, roasted and peeled 1/2 cup shredded mozzarella cheese (2 ounces) 1. In small bowl combine mayonnaise, garlic, basil, oregano and pepper. 2. Brush cut side of bread with half the mayonnaise mixture. Grill or broil 5 inches from heat 2 minutes or until golden brown. Remove and set aside. 3. Brush each zucchini slice with remaining mayonnaise mixture. Grill or broil 2 minutes, turning once. 4. Top each slice of bread alternately with zucchini and red peppers. Sprinkle with cheese. 5. Grill or broil 1 to 2 minutes or until golden brown and cheese melts. Serves: 4
