This is another recipe I found in that little plastic baggie with the handwritten recipes in at the thrift store. Of course - as we all do - I tweaked it a bit! hehehe My husband and I loved it!!!!!!!! It is a keeper!!!!!!
CALIFORNIA AVOCADO AND TURKEY MELT
4 thick slices whole grain bread, toasted OR thick slices of French bread
3 oz. Slice cooked turkey breast
1 slice tomato
1 slice low-fat Muenster cheese
2 slices avocado
1 tbl. Salsa
Place toast on a microwave-safe serving plate. Arrange turkey on bread and top with tomato and cheese. Microwave on med. until cheese is melted, and turkey is heated through, checking after 1 minute. If cheese isn’t entirely melted, microwave for an additional 30 seconds. Top with avocado and salsa.
Per serving: 273 calories, 7 grams fat, 77 mg. cholestrol, 411 mg sodium and 3.4 grams fiber
What I did:
I had no tomatoes so used 1/3 can – drained – Rotel tomatoes and chilies (original). I only had Provolone sliced cheese so used 1 ½ slices for each melt. I used 4 slices of toast that were spread with butter first and then Miracle Whip. I also used 1 whole avocado, sliced. I also placed some sliced black olives and some sliced mushrooms on each piece of toast. I first spread butter, then Miracle Whip on toast, then spooned the diced tomatoes on top of that, then the mushrooms and olives, then the sliced turkey breast meat (not Deli style) then the avocado slices and then the cheese. Then I baked them on a cookie sheet in the oven at 350 degrees for 15 to 20 minutes, or until cheese was melted. We spooned salsa on top. Perhaps a slice of red onion under the cheese and over the turkey would be good, too! We each ate 1 “melt” for dinner and can have the other for another meal. Also, how about a slice or two of red bell pepper? So yummy!!!!!!!!!!!
