These are more like a cookie than a cracker, but they are oh so good.
1 Cup Butter (not margarine) 2 / 3 Cup Sugar 2 tsp. Vanilla Extract 2 tsp. Carmel Extract 1 Cup Chopped Nuts (pecans, walnuts, or mixture) Club Crackers (regular, low sodium, or low fat, doesn't matter)
Line a shallow (10 or 11 by 15 to 17") cookie sheet with aluminum foil & spray liberally with Cooking Spray. Line the pan with Club Crackers. Put sugar and butter in medium saucepan. Bring to a boil (medium heat) stirring constantly until light in color and foamy. Remove from heat, add Vanilla and Carmel and stir in well. Pour mixture over crackers and spread evenly, sprinkle with nuts. Bake for 10 minutes at 350 degrees. Be careful not to over bake. Let cool for 15-30 minutes, peel off the aluminum foil & break into Cracker treats, enjoy!
