A homemade curry powder, which isn't very hot but still has plenty of spice flavours. The quantities are for about 4 servings, though it can easily be doubled and /or stored etc :
1 tsp ground Ginger 2 tsp ground Coriander 1 tsp ground Cumin 1 tsp Chili powder 2 tsp Turmeric
All well mixed before adding to the pan.
Then add 3 tsp Mango Chutney & 2 tsp Garam Masala to the pan just a few minutes before the end of the cooking time.
