I found this one last night from 4 corner cafe recipes.
Bacon + Tomato Bagel Sandwiches
2 bagels, split and toasted 8 tomatoe slices 8 cooked bacon strips 1 c. shredded mozzarella cheese, (4oz.) 1/4 c. freshly grated Parmesan cheese ranch salad dressing
Place the bagle halves, cut side up, on a baking sheet. Top each with 2 tomato slices and 2 bacon strips. Sprinkle with the Mozzarella cheese and then the Parmesan cheese. Broil 5" from the heat for 1 - 2 minutes or until the cheese begins to brown. Serve with the ranch dressing. Makes 4 servings.

Here is another one I found last night from 4 corners cafe recipes.
Feta + Tomato Bread Appetizer
3 6" French bread rolls, split ...(could use one long loaf and slice it when done) 2 tbsp. olive oil 1 tsp. minced garlic 1 7oz. pkg. Feta cheese, crumbled 3 small chopped ripe tomatoes 1 1/2 tbsp. balsamic vinegar
Mix the olive oil with the garlic. Brush the cut side of the bread with the olive oil mixture. Broil for 2 minutes, until light brown. Sprinkle the cheese on the bread. Top with tomatoes and drizzle with the balsamic vinegar. Serve.

English Muffin Pizza
1 English muffin (split) 1 oz. onion, (diced) 1/4 c. water 2 tbsp. tomato paste 1/4 tsp. basil 1/4 tsp. oregano 1/2 clove garlic 1/2 tsp. sugar 2 tbsp. favorite topping (mushrooms, pepperoni, hamburger, green pepper, etc.) 2 oz. Mozzarella cheese and/or Longhorn OR cheddar
In skillet brown onion. Add water, tomato paste, basil, oregano, garlic and sugar. Cook, stirring occasionally until mixture thickens. Toast muffin under broiler. Spread 1/2 of sauce on each muffin. Add topping and cheese. Place on baking sheet and broil for 5 minutes. Serve.

Open Faced Bacon Sandwiches
16 slices bacon 8 slices toasted white bread 1 20 ounce can sliced pineapple, drained 8 slices Cheddar cheese Cook bacon over medium high heat until evenly brown. Drain and set aside. Place 8 slices of toast on a baking sheet. Place a slice of pineapple, 4 pieces of bacon and a slice of cheese on each. Broil until cheese is melted. Serve hot. Makes 8 servings.

A tasty ham and cheese sandwich that can be topped with mayo and tomato slices.
Ham Delights
5 croissants 1 pound thinly sliced cooked ham 1 8oz. can crushed pineapple, undrained 5 slices Provolone cheese 5 large plain croissants
Combine ham and pineapple in a frying pan. Saute over medium heat until most of the pineapple juice has cooked off. Place foil on baking sheet and set croissants on sheet. Scoop 1/5 of pan mixture on top of croissants. Place 1 slice of cheese on top of that. Broil until cheese melts. Makes 5 servings.

Prep: 25 min, Cook: 20 min, plus cooling time.
Tasty Puff Pastry
1 egg 1 Tbs. water 1 lb. Brie cheese 1/4 cup chopped pecans, toasted 1/4 cup parsley, chopped 1 sheet frozen puff pastry, thawed
Preheat oven to 400°F. Lightly beat egg and water in a bowl and set aside. Slice Brie in half horizontally. Sprinkle bottom half with nuts and parsley. Top with remaining half. Unfold pastry on a lightly floured surface. Roll into a 15 inch circle. Place Brie in center of pastry. Brush pastry edges with egg mixture. Fold edges up and around cheese wheel and press edges firmly to seal. Place seam-side down on baking sheet. Decorate top with pastry scraps, if desired. Brush egg mixture all over pastry and bake 20 minutes, or until golden. Remove and cool on a wire rack 10 minutes before serving. This recipe serves 12 people. Hot Mexican Bean Dip
2 cans (15 oz. each) black beans, well-drained 1 teaspoon hot pepper sauce 1/2 cup sour cream 1/2 cup salsa 8 oz. Monterey Jack cheese, grated
Mash black beans. Add hot pepper sauce, sour cream, salsa and half of the cheese. Spoon into shallow 1-quart casserole dish. Sprinkle remaining cheese on top. Bake at 350°F about 15 minutes, or until bubbly. Serve with t ortilla chips. Makes 4 cups.

1 cup self-rising flour 1/2 cup milk 2 tablespoons mayonnaise or sour cream

Coconut Bread From Barbados
1 1/2 cups butter, softened 3 Tbs. shortening 1 3/4 cups sugar 3/4 cup milk 3/4 cup water 1 tsp. vanilla 6 cups flour 2 Tbs. baking powder 1 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg 3 cups shredded coconut 1/2 cup raisins (optional)
Preheat oven to 350. Children grease 3 loaf pans In a very large bowl, have children measure out butter, shortening, and sugar. Take turns beating with wooden spoon till fluffy. Add milk, water, and vanilla and stir well. Set aside. Have children measure out and mix in another bowl the flour, baking powder, salt, cinnamon, and nutmeg. Let children add flour mixture to the butter mixture little by little, stirring after each addition. Stir in coconut and raisins Divide dough into 3 equal pieces, form into loaves. Place loaves into greased pans. Bake for 45-60 minutes in a 350 oven, until a toothpick comes out clean. Makes 3 loaves.

Junior Apple Crisp
2 Apples 1 tb Flour 1 Heaping tablespoon brown -sugar 1 ts Ground cinnamon -Dash of salt 3 ts Water 1 tb Butter or margarine, cut in small pieces
Try this with vanilla ice cream, vanilla yogurt, fresh cream or half and-half. Peel and core apples, then slice them directly onto toaster-oven baking tray or cookie sheet. In small bowl blend flour, brown sugar, cinnamon and salt. Scatter flour mixture over apples. Sprinkle water over all ingredients (use more water than called for if apples are not very juicy); space out pieces of butter over top. Place tray in toaster oven and set at 375 F. Bake 30 minutes. Makes 2 servings.

Apple Cobbler with Vanilla Ice Cream
4 apples, sliced 1/4 c sugar 1 pn salt 1/2 c cold butter, cut -into small pieces 3/4 c flour 1/2 c Light brown sugar 1 pt Vanilla ice cream
Preheat oven to 350F. Toss apples, sugar and salt together. Divide equally among 4 individual oven proof bowls. Combine butter and flour with fingertips until mixture is crumbly and has the texture of oatmeal. Add brown sugar, allowing lumps to remain in mixture. Distribute evenly over apples. Bake 30 minutes. Serve warm or cold with vanilla ice cream.

Toasted Barbecue Subs
1 long loaf French bread 6 ounces thinly sliced ham 6 ounces thinly sliced salami 6 ounces thinly sliced swiss cheese 3 tablespoons ketchup 1 tablespoon Barbecue Sauce -- any flavor
Split bread horizontally in half. Arrange ham, salami and cheese on bottom half. Combine ketchup and Barbecue Sauce. Spread over sandwich fillings. Replace top of loaf. Cut into 6. Wrap each in aluminum foil. Place in oven at 375 for 15 to 20 minutes or until cheese is melted and sandwich is hot. Makes 6 servings.

Cheese Danish Coffee Cake * in the Toaster Oven
From the 1985 Bisquick's Prizewinning Recipes By You cookbooklet. The person's name who submitted this recipe was not listed with the recipe.
Preheat oven to 350 degrees.
2 tbl. butter 1 1/2 c. Bisquick 1 egg, beaten 2 tbl. granulated sugar 1/2 c. milk 2 tbl. vegetable oil 1/2 tsp. almond extract cheese filling - listed below powdered sugar glaze - listed below 1/2 c. chopped nuts
Cheese Filling: Beat 1 pkg. (8 oz.) cream cheese, softened, 1/4 c. sugar, 2 eggs and 1/4 tsp almond extract until smooth.
Powdered Sugar Glaze: Combine 1 c. poswered sugar with 2 - 3 tbl. water until smooth and easy to drizzle.
Melt butter in 13x9x2" cake pan in oven. Rotate pan to spread butter. Combine remaing ingredients except filling, glaze and nuts in mixing bowl. Beat vigorously 20 sex. Spread in pan containing melted butter. Pour cheese filling over cake batter and cut through mixture about 10 times. Bake 20 - 25 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Drizzle glaze over coffee cake and sprinkle with nuts. 15 servings.
High Altitude Directions (3500 to 6500 ft.): Preheat oven to 375. Decrease Bisquick to 1 1/3 c. Stir 1/3 c. Gold Medal all-purpose flour into Bisquick. Increase milk to 2/3 c. Bake 18 to 23 minutes.
*Our gas oven went out/kaput last night so I was frantic this morning! I had forgotten our toaster oven, but remembered it cooks the same as a regular oven but with smaller pans. Well, I used 2 foil bread pans that fit the oven perfectly and divided the ingredients into the 2 pans. I followed the main recipe exactly and did not go by the high altitude directions. I added chopped fresh apricots (grown here in Alamogordo!) and spread them on top of the cheese filling. I also had to bake these babies for about 45 minutes each! I doubled the glaze recipe so there would be enough for both pans. The last one is baking as I type and smells heavenly!!!!!!! Can't wait to try a slice.
We had a slice each last night and it was wonderful! However, I would raise the temp of the toaster oven to 375 and bake it somewhat longer, covered with foil so as not to burn the top! « Last Edit: Jun 5th, 2003, 03:06am by Chris »

I just had to tell someone! Yestherday I was out shopping with a freind. Well after driving in circles for a couple of hours because the road we needed to make a turn on to was not marked very well, we finally found the place I wanted to check out. It is one of those places that gets all different kinds of things in big amounts and sells them at a big discount. Anyway! lol... I was walking around and came across this toaster oven. Now I had an older one that quit a few years back, so I asked for one for Xmas a couple of years ago...they sure do come in handy if you don't want to heat the kitchen all up and making something on the smaller side. This toaster oven was about 1 1/2 times the size of the newer one I have. But it had a nice big window on the front, and you got to choose where you wanted the heat to come from for what you were doing...my newer one switches back and forth from top to bottom all the time, that tends to make things take longer to cook and sometimes dries them out... how wonderful!! PLUS, there was a non stick metal tray attached right to the top of it that you could use for keeping things warm or maybe even making pancakes or grilled things!! I would have to let you know. And the price was really good too! Now is that different or cool or what? I want to get back there as soon as I can to get this toaster oven. I have a Delongi Convection / Toaster oven....It is nice for doing those quick premade cookies....and some meat entrees such as small roast but muffins tend to volcano and lean no nice round tops the old GE does fine there. But I can make a meatloaf in short order without heating up the whole kitchen so that makes it worth keeping..will just have to do muffins in the older one.....(Yes I have played with the temp settings)

I think it was malfunctioning so I just got a new one and almost burned my first batch of fish sticks/french fries. As you can see, I'm not a gourmet cook but will be trying some of the recipes I've seen on here but my big dilemma is how to cook frozen foods properly. What's the secret with temp/time? Some frozen foods actually give toaster oven instructions but they still don't work for me. I think the oven I have is a convection oven. It's an Oster. Any advice for plain toaster oven cooking would be appreciated. Actually, mine is a Black and Decker. I received that and an Oster for Xmas and decided to keep the B&D. Oatmeal Toaster Oven Cookies
Ingredients:
* 2 1/2 cups Oats (quick or old fashioned, uncooked) * 1 cup flour * 2 large eggs * 1/2 teaspoon salt * 2 sticks butter * 1 teaspoon vanilla * 1 cup packed brown sugar * 1/3 cup granulated sugar * 1 teaspoon baking soda * 1 teaspoon cinnamon * 1 cup plump raisins
Directions:
Preheat your oven to 350º. In a large mixing bowl cream the butter with
the brown sugar, adding the salt and vanilla next. Now add the sugar,
soda, the eggs and cinnamon. Mix altogether until creamy and mixed well.
Add the flour a bit at a time until gone and mixed into mixture well. Now
add your oats and mix thoroughly and then your raisins. Take a heaping
tablespoon full of dough and drop onto your greased cookie sheet. Push
down on them to flatten. Bake in toaster oven for about 10-12 min until
brown on top.
