Ginger Glazed Carrots
2 pounds peeled baby carrots 1/2 cup water 1/4 cup butter 2 tablespoons packed brown sugar 1 1/2 teaspoons ground ginger 1/8 teaspoon ground red pepper -- to 1/4 1/4 teaspoon salt
Directions: In a large saucepan, bring carrots and water to a boil; cover pan. Reduce heat to medium-low And cook 15 to 20 minutes or until tender. Drain. Add remaining ingredients; increase heat to high. Cook and stir until carrots are glazed, about 1 minute. Serves 8
