Cold Green Bean Salad
3/4 cup Olive oil 1/8 cup White wine vinegar 2 1/4 tablespoons Lemon juice 3/8 teaspoon Paprika 3/8 teaspoon Dry mustard 2 1/4 teaspoons Dill weed 3 - 16 oz. cans Green beans - cut or whole Salt & pepper to taste 3/4 cup Mayonnaise 6 tablespoons Sour cream 3/8 cup Bleu cheese 3 bn Green onions - chopped 3 small Cucumbers - sliced
Directions: Make a dressing from the olive oil, vinegar, lemon juice, paprika, dry mustard, dill weed, salt and pepper. Add the mayo, sour cream and blue cheese to the above mixture. Pour over beans and marinate 2 hours before serving. Add the green onions and cucumber and toss lightly. Serves 6 - 8.
