Zucchini Santa Fe Style
3 cups sliced zucchini 1/2 cup chopped onion 1 tablespoon cooking oil 1 can chopped green chile's drained (4 oz) 1 medium tomato, chopped 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon garlic powder 1/2 cup shredded cheddar cheese, or Monterey jack cheese
Directions: In a large skillet, saute the zucchini and onion in oil or 3-4 minutes until crisp-tender. Lightly grease a casserole dish and add the zucchini and other ingredients and bake at 325 for 20 minutes. Sprinkle with the cheese and heat until the cheese is melted and bubbly.
