Zucchini Cheese Casserole
1/2 c Chopped onion 12 c Sliced zucchini 2 cn Cream of chicken soup 2 c Sour cream 2 c Shredded cheddar cheese 2 pk Stuffing mix 1/2 lb Margarine; melt
Directions: Cook the onion and zucchini in boiling water for 5 minutes. Drain. Combine soup, sour cream and shredded cheese. Add drained zucchini. Combine stuffing mix and melted butter. Spread half of the dressing mix over the bottom of a 9X13 inch. casserole dish. Spoon on vegetables and cover with remaining stuffing. Bake at 350 degrees for 30 minutes. 9-12 servings.
