Crock Pot Veggie Kielbasa Soup Mar 4, 2007 17:15:25 GMT -6 Quote Select PostDeselect PostLink to PostMemberGive GiftBack to Top Post by chief_cook2 on Mar 4, 2007 17:15:25 GMT -6 Crock Pot Veggie Kielbasa Soup1/2 lb. reduced-fat smoked turkey kielbasa, sliced1 medium onion, chopped1 medium green bell pepper, chopped1 celery rib with leaves, thinly sliced4 garlic cloves, minced2 cans (14-1/2 oz. ea.) reduced sodium chicken broth1 can (15-1/2 oz.) great northern beans, rinsed and drained1 can (14-1/2 oz.) stewed tomatoes, cut up, undrained1 small zucchini, sliced1 medium carrot, peeled and shredded1 TB dried parsley flakes1/4 tsp. crushed red pepper flakes1/4 tsp. ground black pepperIn a nonstick skillet, sauté kielbasa over medium heat until lightly browned.Add the onion, green pepper, celery and garlic. Sauté and stir for 5 minutesor untilvegetables are tender. Transfer to a crock pot/slow cooker.Stir in the remaining ingredients. Cover and cook on LOW heat setting for 8to 9 hours. Yield: 5 servings.
