Crock Pot Veggie Kielbasa Soup
1/2 lb. reduced-fat smoked turkey kielbasa, sliced 1 medium onion, chopped 1 medium green bell pepper, chopped 1 celery rib with leaves, thinly sliced 4 garlic cloves, minced 2 cans (14-1/2 oz. ea.) reduced sodium chicken broth 1 can (15-1/2 oz.) great northern beans, rinsed and drained 1 can (14-1/2 oz.) stewed tomatoes, cut up, undrained 1 small zucchini, sliced 1 medium carrot, peeled and shredded 1 TB dried parsley flakes 1/4 tsp. crushed red pepper flakes 1/4 tsp. ground black pepper
In a nonstick skillet, sauté kielbasa over medium heat until lightly browned.
Add the onion, green pepper, celery and garlic. Sauté and stir for 5 minutes or until vegetables are tender. Transfer to a crock pot/slow cooker.
Stir in the remaining ingredients. Cover and cook on LOW heat setting for 8 to 9 hours.
Yield: 5 servings.
