Stuffed Peppers
Cooking Spray 6 medium sweet green or red bell peppers 3/4 pound ground beef or turkey 1/3 cup chopped onion, minced 1/4 teaspoon garlic paste (I used minced garlic in a jar) 1/2 teaspoon oregano 1/2 teaspoon salt 1 can (12 ounce) corn, drained 1 teaspoon prepared mustard 1 10-3/4-ounce can condensed tomato soup 1 can (14.5 ounces) diced tomatoes, drained
Lightly spray slow cooker with cooking spray. Clean the inside of peppers and cut off tops In a small bowl, combine ground beef or turkey, onion, garlic paste, oregano, salt, and corn. Spoon mixture into peppers. Transfer to slow cooker, stacking peppers in layers. Combine mustard, tomato soup and diced tomatoes. Pour tomato mixture over peppers. Cover and cook on low for 8-10 hours.
