SERVINGS: 8 2 heads cauliflower, cut into flowerets 1/4 cup olive oil 3/4 tsp. salt 1/2 tsp. pepper SAUCE: 3 tbs. butter 3 tbs. all purpose flour 1 1/2 cups milk 1 tsp. salt 1/4 tsp. white pepper pinch ground nutmeg 6 oz shredded Cheddar cheese pinch cayenne pepper chopped parsley HEAT OVEN TO 4OO DEGREES. CAULIFLOWER: In bowl, toss together cauliflower, olive oil, salt, pepper until well coated. Transfer to baking sheet. Roast 30 min. or until tender. SAUCE: In saucepan, melt butter. Sprinkle the flour over butter in saucepan, whisk until mixture is slightly brown. Whisk in the milk until smooth. Add salt, pepper, nutmeg simmer 3 min. Remove from heat. Whisk in cheese and cayenne until cheese is melted. Transfer cauliflower to serving platter. Spoon the sauce over cauliflower. SERVE IMMEDIATELY AND WITH PARSLEY AS A GARNISH.*
