1 cup butter, melted 10 to 12 small red potatoes, scrubbed clean 2/3 cup sour cream 2 T. snipped chives (or 2 T. dried dill weed) 8 slices bacon, cooked crisp and crumbled Salt and pepper to taste
Slice unpeeled potatoes (think thin!) and cook in butter over low heat until tender for 15 to 20 minutes, stirring occasionally. Add bacon, chives, seasonings, and sour cream. Heat slowly for one minute more. Do not boil or sour cream will curdle. Serves 4
