1 c. flour 1 tsp. baking powder 1 tsp. salt (optional) 2 eggs 1/2 c. milk 1 tsp. salad oil 1 (15 oz.) can salmon (drained and flaked)
Heat fat or oil (3 or 4 inches) to 375 degrees in deep fat fryer or deep pan. Mix dry ingredients; add eggs, milk and oil. Mix well. Add salmon and mix. Drop by tablespoons into hot fat and fry about 5 minutes or until thoroughly cooked. Drain on paper towels.
