Summer Squash Casserole
6 cups squash 1 cup chopped onion 2 cups chopped carrots (optional) 2 cups corn (optional) 1 can "cream of" soup (your favorite) 8 ounces sour cream 1 package stuffing mix Shredded cheese
Simmer squash, onions, carrots and corn for 8-10 minutes in salted water. Drain; place in a large bowl. Prepare half of stuffing mix according to directions. Place prepared stuffing in the bottom of a casserole, basically creating a layer across the bottom.
Mix soup, sour cream and vegetables together, than pour on top of stuffing in the dish. Sprinkle the unprepared dry stuffing mix on top (just enough to add texture, but not enough to completely cover). Sprinkle shredded cheese on top, if desired. Cover and bake at 375 degrees for 30 minutes. Allow to cool, then serve as a side dish with main course.
