4 medium Vidalia or yellow onions, cut into quarters. (Leave the root end intact so onion quarters hold their shape as they cook) 1 tablespoon olive oil 1/4 teaspoon salt 1/8 teaspoon black pepper 1/2 cup butter, cut into 1/2 inch pieces 1/8 to 1/4 teaspoon cayenne pepper 1 12 ounce can of beer or 1 1/2 cups apple juice (seasonings can be adjusted to taste)
Lightly grease a 10 inch round disposable foil pan. Arrange onions in pan. Drizzle with oil. Sprinkle with salt and black pepper. Dot onions with butter. Sprinkle with cayenne pepper.
For charcoal grill, place pan on rack of uncovered grill directly over medium hot coals. Add beer to pan. Cover pan with foil. Grill for 40 to 45 mins or until onions are tender. (For gas grill, preheat grill. Reduce heat to medium high. Place pan on grill rack over heat. Add beer to pan. Cover pan with foil. Close grill and grill as above.)
Oven directions: Arrange onions in a greased 2 quart casserole dish. Drizzle with oil. Sprinkle with salt and pepper. Dot with butter. Sprinkle with cayenne. Add beer to dish. Cover with foil and bake in a 375 degree oven for about 1 hr or until onions are tender.
