Cheesy Mashed Potatoes
2 tsp. salt, divided 2-1/2 lb. russet or Yukon Gold potatoes, peeled and quartered 1/2 cup heavy whipping cream 1/2 cup milk 8 TB (1/4 lb. = 1 stick) butter 2 TB fresh chives or green onion (green part only), chopped, divided 1/4 tsp. grated nutmeg 1/4 tsp. ground white or black pepper 1 cup (4 oz.) shredded Swiss cheese
1. Fill a large saucepan halfway with water; add 1 teaspoon salt. Bring to a boil over high heat. Carefully add potatoes to boiling water; simmer until tender, about 15 minutes. 2. Meanwhile, in a small saucepan, combine cream, milk and butter; cook over medium heat until butter melts. Remove pan from heat. Drain potatoes; transfer to a large bowl. 3. With an electric mixer set on low, whip potatoes until coarsely mashed. Add the cream mixture, 1 tablespoon chives, the nutmeg, remaining salt and the pepper; whip on medium speed until fluffy. 4. Add cheese; whip until blended. Transfer potatoes to a serving bowl; sprinkle with remaining chives.
Serve hot.
