Yam in Coconut Milk
1 medium sized yam 2 medium carrots 1 onion chopped 1 cup milk or coconut milk salt to taste ¼ cup sweet pepper dash of favourite seasoning
Method
Wash and steam yams, slice them, then slice carrots. Grease Pyrex dish. Alternate layers of yam, carrots, green peppers and seasonings. Cover lightly with milk, bake in moderate oven until done.
