ONION JAM [superb] [diabetic friendly]
1 tablespoon olive oil 3 thinly sliced purple onions 2 tablespoons chicken stock [cube is fine] 2 tablespoons balsamic vinegar 1 teaspoon sugar...
pan fry in the oil ~ onions slowly until softened [about 10 minutes] stirring occasionly meanwhile mix stock sugar and vinegar together.. when onion is softened add the stock mix to onions and simmer slowly for another 15 - 20 mins., stirring occasionaly ..
serve with grills, and bbq's.. nice on ham or bacon with an egg for breakfast... it has a very mellow flavour.. and can be used both hot or cold...
