LITTLE POTS OF EGGS
this is an easy left over breakfast... tasty and allows you to use up left over bits of cheese, the odd mushroom, couple of spring onions, spinach...slice of ham... little bit of bacon.. whatever is lolling around in the refrigerator.. lovely on a sunday morning..
serves 2
degree of difficulty: low
you need:
take whatever breakfast type ingredients you have in the fridge (or care to go out and "gourmet" shop for) say, mushrooms, spinach, eggplant & roasted garlic, fresh salmon, ...
method:
put them (prepared) into a ramekin and add a whole egg, then top with a mix of broken bread bits and cheese bits (cheddar, brie, fetta...) and bake in a hot oven till the egg is just set and the bread and cheese is golden and crunchy!!
