Sounds a little like scalloped potatoes. Is Scalloped Potatoes an Australian name as well I wonder?
This recipe sounds really nice.

There is also another type with layers of tomato and onion topped with bread and put into the oven.

I did a search to see if I could find it and found a Canadian green tomato one instead. It sounded very interesting. I planned to have fried green tomatoes in the next few days.

Layered (scalloped) Potato Casserole
Preheat Oven to 180oC/300oF
1 jar pasta sauce 2 sliced bell peppers 4 potatoes, thinly sliced few olives, diced mozzarella cheese, grated 9 oz mushrooms, sliced parmesan cheese, grated 2 ozs milk if required
Layer a deep covered casserole dish with potato, sauce, mushrooms, mozzarella, potatoes, sauce, peppers, mozzarella potato, sauce, mushrooms, mozzarella potato, sauce, peppers, mozzarella potato, olives, parmesan. I put rings of the peppers on top of the final layer of potato. Cover, bake for 1 and 1/2 hours or until potato is soft. If it seems dry and the potato is not soft add ½ a cup of water/milk and cook for another 30 minutes. I removed the cover from the dish and added the parmesan about 10 minutes before the dish was finished cooking.
