1 cup self-raising flour ~ [plain flour +1teaspoon baking soda] 1/2 tsp salt 2 eggs 3 tbs Extra Virgin Olive Oil 1 cup buttermilk 1 cup corn kernels Good dash of Tabasco sauce
6 lge slices of Smoked Salmon, cut in half (approx 200g) 1/4 cup sour cream 1 lge firm ripe avocado, peeled & diced, mixed with 1 tbs lime juice 2 tbs finely chopped chives and dill sprigs Freshly ground black pepper
1. Mix flour & salt together in bowl. 2. Mix eggs & buttermilk together with olive oil & slowly beat into flour mixture to make a smooth batter. 3. Mix through corn kernels & Tabasco sauce, season with salt and pepper. 4. Lightly oil a non-stick frying pan & pour about 2 tbs of batter per pancake, cooking 4 at a time over medium heat. 5. When bubbles start to appear on top, flip pancakes & cook for 2-3mins until cooked through. 6. Remove & keep warm while cooking balance of mixture. 7. To serve, spread a little sour cream onto each pancake &top with avocado. Drape round the Smoked Salmon & garnish with chopped chives, dill sprigs & freshly ground black pepper.
