CHICKEN AND RICE CASSEROLE
8 x dried chinese mushrooms... 1 tablespoon celery seeds... [or coriander seeds] cooking spray... 2 x cups long grain rice... 2 x medium onions ~ sliced... 4 x cloves garlic ~ crushed... 1 x tumeric ~ ground... 2¾ x cups chicken stock ~ boiling... 2 x tablespoons fish sauce... 1 x tablespoons fresh parsley ~ chopped [coriander]
place mushrooms in small heatproof bowl, cover with boiling water, stand for 20 minutes; drain discard the stems slice caps finely... coat a 2.5 litre, [10 cup] flameproof casserole dish with cooking spray; cook chicken in batches until brown on both sides... add rice, onion, garlic, crushed celery seeds and tumeric to same dish and stir until fragrant... add mushrooms, stock and fish sauce.. place chicken over rice mixture; bake in in moderately hot oven about 45 minutes or until rice is tender... stir in fresh parsley and serve....
