½ pound mushrooms 2 cups chicken stock 1 slice bacon -- cut into strips 1 T. cream 1 dash salt & pepper 1 dash vinegar ¼ cup butter -- grated 2 T. corn flour 1 tsp. nutmeg -- grated
Place mushrooms, bacon and vinegar in saucepan, bring to boil and simmer for 10 mins. Remove and cut mushrooms into strips. Discard bacon. Blend in butter, corn flour and stock. Stir until boiling and simmer for about 3 minutes. Stir in the mushrooms, add salt, pepper and nutmeg. Bring to the boil. Add cream, stir and serve.
