Spinach Rice ( Low Carbohydrate Recipes )
1/4 cup olive or vegetable oil
2 medium onions, chopped
2 (10 oz.) pkg. frozen leaf
spinach, defrosted
1 cup water
1/4 cup rice, uncooked
salt and pepper to taste
Saute onions in oil until golden. Add spinach and water; bring to a
boil. Add rice, season with salt and pepper; stir. Cover and cook
over low heat for 15 to 20 minutes, until rice is tender.
This tasty, low-calorie, low-carbohydrate dish serves 6.
