Hi Nancy, I want to wish a Happy and as Healthy as possible Holidays. I know this is a strange time of year to be asking for this recipe. I had an delicious and easy recipe for gazpacho that used diced tomatos and salsa. Of course it is lost somewhere in my thousands of recipes. I would love to have this recipe. It is wonderful warm as well and a great way to get those veggies in. Thanks Candi

SPICY GAZPACHO
1 (48 oz.) can V-8 juice, regular or spicy 1 "deli" container salsa (12-16 oz.) Salt, pepper (to taste) 1 tsp. Mrs. Dash's 3 med. zucchini 1 fresh tomato 1 lg. can Italian plum tomatoes Juice from 1/2 of a lime or 2 tsp. vinegar 3 lg. cucumbers 1 sweet red onion 1 lg. carrot
In a large bowl mix V-8 juice, salsa, lime juice, salt, pepper and Mrs. Dash's. Drain tomatoes; remove seeds. Blend in food processor and add to mixture. Peel and seed 2 cucumbers. Blend in food processor and drain liquid in a colander. Peel onion and process. Add to mixture. Peel carrot and process. Add to mixture. Scrub but do not peel 2 zucchini; process and add to mixture. Refrigerate mixture, preferably overnight. Before serving, coarsely chop and add reserved cucumber, zucchini and fresh tomato. Taste for additional seasoning. Serve with tortilla chips or croutons.
