Now here is a recipe that is a little different. I would imagine that if you can't find the Red Rice, white rice would do just fine. Fondly, Lor

Red Himalayan Rice Salad 1 cup Red Himalayan Rice cooked 1 cup fresh or frozen corn niblets(thawed) 1/2 cup red bell pepper chopped 1 cup yellow summer squash, cubed 1 cup canned red kidney beans, rinsed and drained Dressing: 4 Tbsp. Rice Wine Vinegar 2-3 Tbsp. Extra Virgin Olive Oil 1/2 tsp. each dried Oregano and Basil 1/2 tsp. sugar 1/8 tsp. Cayenne pepper salt and pepper to taste Combine all ingredients and chill until ready to serve. Serves 6
