Tomatoes are in season now and if you're like me, you're having trouble finding different recipes for them. We have a garden in our backyard with tomatoes and basil. Here's one more way to make use of your tomatoes...
Ripe tomatoes:about 1 1/2 pounds cored and diced small Fresh basil: 1/3 cup shredded Salt and coarsely ground pepper Rustic bread: large loaf cut into 1 inch thick slices Large clove of garlic Olive oil, about 3-4 Tablespoons
Combine tomatoes, basil, salt and pepper. Toast bread under broiler until lightly browned on both sides. Rub garlic on toasted bread, brush with olive oil. Using a slotted spoon divide the tomato mixture evenly onto the bread slices. Enjoy!
