Stuffed Whole Mushrooms from Lyle & Vicki Houston (friends)
1 lb. Monterey Jack cheese, frozen overnight, then shred & crumble 1 lb. bacon, crisp fried, drained and crumbled 2 - 3 doz. button mushrooms - do NOT slice
Destem and place caps upside down. Chop stems and sauté. Mix crumbled bacon, shredded cheese and mushroom stems. Pack mixture into the center of mushroom caps, rounded above top. Bake in a shallow pan for 10 - 15 min. @ 375º or until cheese mixture melts into caps. Serve.
