Pineapple Stuffed Celery
1 Stalk celery 1 Container low-fat cottage cheese; (16 oz.) 1 cn Crushed pineapple; (8 oz.) drained 1 ts Sugar 1/2 ts Ground ginger 1/4 ts Salt
Wash celery; trim and separate into ribs. Cut into 2 1/2 inch lengths. Drain cottage cheese, if necessary. Mix cottage cheese, pineapple, sugar, ginger and salt; spoon cottage cheese mixture into celery ribs, mounding slightly. Garnish with paprika and celery leaves, if desired. Yield: 2 1/2 cups filling.
