Wash celery; trim and separate into ribs. Cut into 2 1/2 inch lengths. Drain cottage cheese, if necessary. Mix cottage cheese, pineapple, sugar, ginger and salt; spoon cottage cheese mixture into celery ribs, mounding slightly. Garnish with paprika and celery leaves, if desired. Yield: 2 1/2 cups filling.
