Pancetta Wrapped Sausages

Source: Pg. 24 Feast
1 package thingytail sausages 50 slices thin pancetta or 25 thin slices bacon (2 packs) 3 tablespoons vegetable oil
1. Preheat oven to 350.
2. Wrap each slice of pancetta around each sausage. If using bacon, cut each piece in half. Spoon oil into roasting pan and arrange sausages on top. Roast for 35-45 minutes until bacon is crisp and sausages are cooked within.

Another old thread, but I think these sound good too and want to test them out. Will these be okay if cooked earlier in day, put in frig and then reheated just before serving at shower?
