Roasted Garlic And Cheese Spread
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 bulb garlic -- unpeeled 1 teaspoon olive oil 1 1/4 cups 1% lowfat milk 2 eggs 1 cup grated parmesan cheese 1 teaspoon grated onion 1/4 teaspoon white pepper 1 teaspoon caraway seed 1/2 teaspoon dried thyme -- crushed unsalted crackers
Brush the unpeeled bulb of garlic with the olive oil. Wrap garlic bulb in a sm all piece of heavy duty aluminum foil. Bake in a 375ø oven for 30 minutes. Coo l about 30 minutes.
Trim end of garlic bulb; squeeze pulp from cloves into food processor bowl or b lender container. Add 1% lowfat milk, eggs, Parmesan cheese, onion, and white pepper. Cover and process or blend until smooth. Transfer to a greased 8-inch quiche dish or 9-inch pie plate. Sprinkle with caraway seed and thyme.
Bake in a 375ø oven for 20 to 25 minutes or until set. Cool 30 minutes. Cover and refrigerate until thoroughly chilled. Serve with unsalted crackers. Makes 36 (1-tablespoon) servings.
