I had found this one a while ago, somewhere. This makes the fluffiest, delicious scrambled eggs, using a little non stick cooking spray in a frying pan. This is less costly than purchasing. Almost ZERO calories and if anyone is on Weight Watchers, 1/4 c. of this equals only 1 point.
Egg Substitute #1
Separate the whites from the yolks of 10 eggs, placing the whites into a blender/food processor.
(Save the yolks for something else or give them to a neighbor!)
Break 2 whole eggs into the blender. Add 1/4 c. butter buds or similar for flavor. Mix for about 30 seconds. Place in a jar for later use.
1/4 cup = about 2 eggs
This recipe may also be cut in half.

Egg Substitute #2
6 egg whites 1/4 c. instant nonfat dry milk powder 2 tbsp. Water 1 1/2 tsp. vegetable oil 1/4 tsp. turmeric
Combine all the ingredients in a blender/food processor. Process for 30 seconds. Refrigerate up to 1 week or freeze in an airtight container up to 1 month. Makes 3/4 cup, 90 calories per 1/4 cup. Nutritional info per 1/4 cup: 10.6 g protein, 2.4 g fat, 6 g carb, 2 mg chol, 162 mg sodium, 130 mg calcium
