Stracciatella
2 Eggs, beaten 2 Tablespoons Parmesan cheese, grated 2 Tablespoons Italian-style breadcrumbs 3 cups Chicken broth
Slowly bring the broth to a boil. Whisk together the eggs, cheese and breadcrumbs. Slowly drizzle the egg mixture into the broth while stirring constantly. Remove from the heat and serve immediately. Serves 2.
