This is a quick toast that I used to make for my kids, have checked to see if anyone else has posted anything similar, but couldn't find one, it will serve 2, but three little uns and appeals to the vegetarians, so here goes: Preheat oven to 200C or 4OOF
2 - 4 slices of white or soda bread 4 ripe tomatoes, cut in half 1 sprig of rosemary or 2 sprigs of fresh thyme 7 ozs single cream Maldon sea salt and ground black pepper 2 tbs good olive oil garlic clove peeled and chopped
Simmer the cream with your choice of herbs and garlic for 5 mins until slightly thickened lay your tomatoes sliced side up in a gratin dish and cover with the cream mixture, Season with salt and pepper and bake for 15-20 minutes. Meanwhile drizzle the olive oil over the bread and heat in the oven for the last five minutes. Serve the bread on warm plates cover with the tomatoes and drizzle the cream over the top. Eat immediately.
