I have searched 75% of the sites to see if this recipe has anything similar posted, but I've decided to share it anyway: This recipe won't be too popular here in Scotland, sweet potatoes are far too expensive here, but I like it for a change, when I'm feeling flush.
This quantity will serve 4
Heat a tbsp veg oil and cook 1 diced white onion for 5 mins until soft. Add 1 tbsp of curry paste and cook for approx 2 mins. Stir in approx 2 lbs of sweet potatoes which have been peeled and diced. Add one and three quarters a pint of veg stock and a 1/2 pt of coconut milk, bring the whole lot to the boil then simmer gently for 15 minutes. Liquidise in batches, return to the pan, season to your taste, reheat then spoon into heated bowls and decorate with cream and parsley. Serve with your favourite crusty bread (and butter). Even better serve in the very popular bread bowls.
