Use seasonal veggies, or veggies that you particular care for but here are some suggestions
1 red onion quartered (leave the root intact) 2 Fennel Bulbs quartered 2 leeks, white parts only cut into 2" pieces 1 Sweet Potato peeled and cut into chunks 1 head of garlic cut across the euator 10 shallots peeled 4 fl oz of the garlic, chilli and oregano oil 2 tsbp of sea salt
Spread all the veg on a baking sheet. Brush with the oil and sprinkle the salt all around.
Roast in an oven heated to 230 C or 450 F for 25 minutes, you may have to remove some of the veg that softens sooner than others.
When all the veg are soft brush again with more of the oil and serve.
