I am trying to find ways to use up some of my glorious mint, I have made a strawberry, mint and blackpepper type compote. Not tnt yet. Here is one that has been tnt:
Coriander and mint salsa
Ingredients 4 tbsp Coriander, roughly chopped with the stalks 2 tbsp fresh mint leaves 1 spring onion, finely chopped 2 garlic cloves, crushed 150ml Olive oil 0.5 tsp freshly ground salt and pepper
Method Whizz all the ingredients in a food processor and check seasoning, adding more oil if needed. Serve dollops of the dip with spicy snacks. Serves: 125ml Prep: 10 min
Sue this might make a cooling dip with hubby's chilli con carne and help to use up some of that delicious mint.
