This is an easy vinegar and is excellent in chutneys and salad dressings, You will need:
3 whole star anise (don't use old ones) 1 and a half inches of fresh ginger, peeled and sliced 9 fl ozs red wine vinegar
Bring the red wine vinegar slowly to the boil then simmer for 2 minutes. Remove from the heat and add the other ingredients, leave to cool.
Pour the mixture into a sterilised jar, cover and keep in a dark place for 3 weeks. To use the vinegar, filter out the star anise and ginger. Once opened store in the fridge.
