This is a dish that was made during hard times, when money was tight. Every person in Scotland likes a different recipe, could be thick or thin (soup type) - sausages, roast beef remnants left over from Sunday lunch if you were lucky, corned beef the list goes on. This dish has now found its place as quite a regular meal, not just for the few days before payday. My grandchildren are fussy eaters but they will always eat stovies.
This recipe is for:
Sausage Stovies
2 lb Potatoes 1 lb Onions 1 lb Sausages 1 Tsp Sage 1 Tsp Thyme 2 Beef Stock Cubes Salt and Pepper
Method
Peel and slice the potatoes and peel and chop the onions. Dice the sausages. In a baking dish put a layer of potatoes, a layer of onions and a layer of sausage. Season to taste and sprinkle over half the herbs. Continue the layers until you have used up all the ingredients, ending with a layer of potatoes. Sprinkle on the rest of the herbs. Dissolve the stock cubes in 1 pint of hot water and pour into the baking dish. Bake in a medium oven, 350F, for 40 minutes
This dish is not conducive to hot weather. Dependant on where you live you may want to save this for the colder times.
