As this seems to be an exceptionally good year for Basil I am trying to find old recipes so that I can put it to good use.
3 Sprigs of Basil/Thyme (washed and dabbed dry) 2 garlic cloves (peeled) 1 and 3/4 pints of red or white wine vinegar
Place the basil/thyme and garlic in a bottle and pour the vinegar slowly into the bottle. Leave the contents of the bottle for at least 14 days, occasionally swinging the bottle from side to side gently.
Pass the vinegar through a muslin bag and pour into a second sterile bottle. Store in a cool, dark place.
I like to add a few herb sprigs to the finished bottle - just makes it look nice
