I used to make these biscuits, but I have tried kneading the dough in the mixer with the dough hook, the results were disappointing compared to kneading by hand. I may try again and cut down the fat content.
Pre-heat oven to 325F, 170C For the biscuits you will need:
8 oz. plain flour 4 oz. butter of margarine 4 oz. sugar 1 egg, well beaten grated rind of 1 lemon half a teaspoon of baking powder 1 tsp of powdered cinnamon.
Cream together the butter and sugar Sieve together all the dry ingredients and add together with the egg Knead to a smooth stiff paste On a lightly floured board, roll out to a quarter inch thickness Cut into rounds and bake on a lightly greased baking tin for 20 minutes. Whilst still warm sprinkle tops with a mixture of cinnamon and caster sugar.
