I only make this on high days and holidays. You can now buy it in tins by that well known 57 varieties company, but I’m sure it won’t taste as good as this one. This was a pudding that Ron’s late mum made for them and served with home-made custard. All of these old traditional dishes are being replaced by tins or microwave versions - it’s the way of the world, but it’s a recipe worth giving a try.
Spotted Dog
8 oz SR Flour 2 oz castor sugar Pinch of salt 4 oz Butter (MIL used margarine) 5 oz Sultanas 6 tbls water 1 oz melted butter
Sieve the flour and salt then rub in the butter. Add the sugar and sultanas. Mix in the water to make a soft dough. Turn out onto a floured board and form into a roll. Brush the melted butter onto greaseproof paper or foil and wrap the roll loosely but securely in the paper or foil. Tie or seal the ends. Place in a steamer and cover tightly, steam for 1 ¾ hours.
You can serve with custard or sprinkle with castor sugar and slice when cool.
