Some might class this as a sandwich, but I think it is more substantial than just a sandwich. Translated it means something like cheese in a carriage. It serves two as a light lunch You will need:
8 slices white bread (if the bread is on the thick side give it a roll with your rolling pin) 1 ball of mozzarella cut into 4 slices 8 large basil leaves, if for some reason you don't like basil you could leave it out or use fresh thyme. 2 tbs seasoned flour 2 eggs, beaten with a splash of milk and seasoned olive oil and a small pat of butter for frying
Use a cutter to cut circles about 10cm from the slices of bread. Divide the cheese between 4 of the circles, place a basil leaf on either side of the cheese. Put the rest of the bread circles on top, press the edges together.
Put the flour on a plate, Dust the sandwiches in the flour to coat lightly, then dip them in the egg to completely coat. Heat the oil and butter and fry the sandwiches for about 3 minutes each each until crisp and golden*. Sprinkle with maldon (sea salt flakes) and serve.
*Alternatively brush the sandwiches with the oil and butter mixture and grill on each side.
