This is a traditional recipe for using up vegetable leftovers
1lb cooked mashed potatoes 8ozs of cooked Brussels sprouts or cabbage Salt and pepper Butter/oil for frying
Mix together the mash and greens. Season generously with salt and pepper. Heat the butter/oil in a frying pan. Add the vegetable mixture and press into a pancake mixture. Cook until browned, flip over and brown the other side.
Personal touch - crack an egg on the top of the veg pancake and cover for a few minutes until the egg sets.
